At the piano, Mathieu Martin succeeds Nicolas Magie. After 7 years in the brigade, the young Chef now offers a menu that resembles him, combining accuracy, sincerity, simplicity, but also poetry and fantasy. Originally from the South-West, he likes to create to surprise, amaze and make people want to come back! He changes his menu according to arrivals, the market, the season.
He learned from great names in the kitchen - Maurice and Xavier Isabal, Jean Marie Gautier, Eric Fréchon, Thierry Marx, ... and in prestigious houses - Ithurria, Hôtel du Palais, Bristol, Cordeillan Bages, ...

The restaurant is open Tuesday evening through Saturday evening.
The bar at Le Saint-James opens onto a vast terrace, the hotel grounds and a limitless view of Bordeaux. Guests come to get away, reflect, but also to work, meet friends, savour some alone time, enjoy a tête-à-tête or family gathering. Any time, from breakfast to a nightcap, it is a comforting pleasure to settle into this space dotted with design classics, armchairs, sofas and other furnishings designed by Jean Nouvel, Verner Panton and Charles Eames.
In winter, with a fireplace tempt you to take a break and relax in the distinctive bar, a charming place of countrified chic.
