A gourmet experience
At the heart of this experience is a six-stage menu carefully devised by our talented Chef Mathieu Martin and his team, including Pastry Chef Sébastien Bertin. The meal opens with a glass of Champagne, the prelude to a symphony of flavours enhanced by food and wine pairings carefully selected by our Head Sommelier Frédéric Rouglan. This unique menu revisits the signature and emblematic dishes of the Saint-James, as well as exclusive dishes to be discovered when our restaurant reopens.

Located in the enchanting setting of Château Leroy-Beauval, just 20 minutes from Bordeaux, La Parenthèse offers an unparalleled experience. In this intimate and elegant space, with only 8 tables, every detail has been carefully curated to reflect the excellence and refinement of this iconic house. Like a cocoon, this venue provides a warm atmosphere where every meal becomes a timeless moment.

The La Parenthèse restaurant was designed in close collaboration with the prestigious Sturia company, recognised as a benchmark for French caviar. Our relationship with Sturia has been built up over more than 10 years, and is based on shared values: excellence, respect for products, and a sustainable vision of gastronomy.
